Use the following key combinations on docked applications. (Note that click-and-hold will bring up a dock menu after a short delay, and Control-click or right-click on a two-button mouse will achieve the same effect but without the delay.)

Switch:

Click on an application to bring that application to the foreground.

Menu:

Click and hold on an application to pop up a Dock menu with a list of open windows for that application.

Some applications like Mail and System Preferences also have application specific menu items.

Alt-Click and hold to reveal menu items Hide Others and Force Quit.

Command-click to open a Finder window showing the location of the current application.

Extra switching power:

Alt-Click to hide the current application then switch. This trick is handy when you wish to switch between applications but keep the desktop exclusive to the foreground application.

Command-Alt-click to switch to an application and hide all others.
